The Technical Controlled Fermentation Days took place in the city of Santiago de Compostela in Spain on 6th and 7th May 2009.
Ferneto, one of the companies that organised the event, made its presence known with the participation of our bakery technician, Manuel Oliveira, who, using some of the equipment we provide, gave a live demonstration and explanation of the advantages of using Ferneto industrial equipment for baking bread and pastry.
The demonstrations included the complete production process, from the mixing phase, through to fermentation and baking, ending with an analysis of the results in the final product.
Due to growing industry requirements, controlled fermentation is considered an increasingly important point for bread and pastry professionals. The higher-than-expected number of visitors was proof of the event’s success.
