CFPSA, the Professional Training Centre for the Food Sector, is one of the best known Portuguese professional training institutes.
Founded on 24 June 1984 as a result of the merger between the Lisbon Schools of Bakery, Patisserie and Confectionery, and the signing of an agreement with the Portuguese State, represented by IEFP – The Employment and Professional Training Institute and Business and Trade Union Associations, the main purpose of CFPSA is to prepare professionals to carry out activities in the food sector, building a major bridge to the world of business.
With headquarters in Lisbon and 3 branches throughout mainland Portugal (in Porto, Coimbra and Albufeira), CFPSA offers a range of training options for:
- Bakery and patisserie,
- Hospitality and restaurants,
- Hotel reception, floor service, kitchen and restaurant / bar service
- Carving and preparing meat products,
- Food quality control.
Many bakers and pastry chefs who serve the bakery industry in Portugal and overseas have also passed through this institute.
As part of our programme to give future professionals a look at the reality of the sector, and to provide them with training, the Coimbra branch of CFPSA organised a study visit to Ferneto last May.
The visit included our entire manufacturing unit, but always with the “sights set” on our bakery laboratory, where our bakery technician Manual Oliveira gave detailed explanations of how our equipment works.
The spiral mixer mixer and the dough sheeter attracted the most attention from the group, due to their importance in layered dough production and time savings.
