2023 started off in the best way for the Portuguese bakery sector, with distinction for the best biological and nutritional bread in the world.
The achievement took place at the international championship that occurred in Italy. “Bread in the City”” which took place at the Sigep AB Tech Expo fair, from the 21st to 25th of January.
Already in its fifth edition, the competition was organized in partnership with the Richemont Club of Italy, which had the participation of nine teams from all over the world, including the national teams of Spain, Italy, Netherlands, Mexico, Peru, China, Israel, Croatia and Portugal.
In this competition, there were places for the following categories:
- Freestyle breads
- “Viennoiseries” products made from puff pastry and brioche
- Oven-baked pies
- Savoury presentation
The Portuguese team, made up of José Carlos dos Santos, Américo Couto and Rui Lopes, presented the “Rosa Negra” bread. Inspired by one of the most emblematic places in Serra da Estrela.
“Rosa Negra” bread is a bread made from wheat and whole wheat flour, carob, honey, rye seeds and juniper – where an initial infusion is made.
Congratulations to Portuguese Creativity! Where the team is concerned, the main secret is the dough, but there are others that can be discovered by any professional working in this area:
- The selection of quality ingredients, best suited to the product that is to be manufactured;
- The implementation of a methodical production, with respect for the times of kneading, rest and formation of the dough, controlling and evaluating the dough in each phase;
- And a lot of training, numerous attempts and various tests that allow you to improve results experiment after experiment…
It was with pride that Ferneto contributed to the team´s training, providing the Bakish Center space in the final preparation phase where they could use the Ferneto spiral mixers, dough dividers and fermentation cabinets.
Congratulations to all the elements of the Portuguese team, who took the “dough to good port”, demonstrating that Portugal is a country of enormous wealth, knowledge and innovation.
