An example of this was the course they promoted with the organization of Academia Diverespaço, on the 21st and 22nd of June, at Ferneto’s Bakish Center.
The training, in Modern Pastry (yeast dough and puff pastry), was given by the award-winning pastry maker José Roldan, considered in 2015, the best artisan baker in Spain.
he kneading processes, the new techniques and fillings applied in the baking of fermented dough, the long-term block rests and their baking, were some of the work points of this course, which had the active participation of 30 professionals.
