The Technical Bakery Days – Mozambique 2024, held recently in the cities of Maputo, Beira and Nampula, stood out as an event of great importance for the country’s bakery and pastry sector.
Organised jointly by Ferneto Moçambique, For Mozambique and Merec, these days featured the special participation of renowned master Ernesto Fernandes.
The cycle of events, whose main aim was to train professionals in the sector, was scheduled to take place in May, over a large part of Mozambique:
- 7 to 10 May in the capital Maputo,
- 15 May in Nampula, in the north of the country,
- 20 and 21 May in the centre, in Beira
The presence of Mr Ernesto Fernandes was one of the highlights. With vast experience and great international recognition, Mr Ernesto led the different sessions, demonstrating all the work phases, from choosing the ingredients to decorating the final product, in an extremely practical and educational approach that allowed participants to observe, practice and talk about the different topics:
- Natural fermentation techniques for the production of naturally leavened bread, emphasising the benefits of flavour, conservation and health.
- Efficient use of equipment to increase productivity and labour rates in the bakery, with an emphasis on spiral mixer technology, water coolers and storage cabinets.
- Innovative recipes, with ideas for new puff pastry products to attract more consumers.
At the end of each sessin, there was a positive impact on the participants, who took away knowledge, ideas, some tools and, above all, a new impetus for their work in the bakeries that feed Mozambique on a daily basis.
To everyone who attended and invested their time, thank you very much for also allowing us to learn and think about the challenges facing the bakery sector.
In conclusion, we would like to thank and acknowledge the work put into organising these days by all the teams involved from Ferneto Mozambique, For Mozambique and Merec, the great mastermind Mr Ernesto Fernandes and everyone who helped make this great event happen.
